Malatya's Hacihaliloglu apricots are picked at full colour, halved, stoned and laid out on drying fields at altitude. From there the crop divides in two.
Sulphured apricots are treated with food-grade sulphur dioxide before drying, which preserves the bright orange colour and a softer bite. Natural apricots skip that step entirely and dry to a deep mahogany brown with a more caramelised flavour. We sell both, and we will tell you honestly which suits your market.
